Coconut oil (or coconut butter) is an edible oil derived from the kernels, meat, and milk of the coconut palm fruit. Coconut oil is a white solid fat, melting at warmer room temperatures of around 25° C (78° F), unrefined varieties having a distinct coconut aroma. It is used as a food oil, and in industrial applications[1] where its high lauric acid content is used in cosmetic and detergent production. High levels of saturated fat in coconut oil cause some health authorities to recommend limiting its consumption as a food.

Dry processing requires that the meat be extracted from the shell and dried using fire, sunlight, or kilns to create copra. The copra is pressed or dissolved with solvents, producing the coconut oil and a high-protein, high-fiber mash. The mash is of poor quality for human consumption and is instead fed to ruminants; there is no process to extract protein from the mash.
